New research on the health benefits of eggs reveals the sunny side of yolks, in addition to being the most flavorful portion of the egg, the yolks are also the source of most of its nutritional benefits. They are nutrient-dense, rich in antioxidants, trace minerals, lutein and other powerful nutrients. In fact, yolks contain 90% of the calcium, iron, phosphorus, zinc, thiamin, B6, folate and B12 found in eggs. They also house 100% of the vitamins A, D, E and K. Plus, the bright orange yolks of free-range eggs are loaded with omega-3 fatty acids.
While egg whites do offer protein, it's the yolks that make that protein bio-available for your body. So next time you're cracking into a carton of eggs to prepare a healthy meal, leave the separator in your gadget drawer and opt for the whole egg.
